Lucy Hyder -
Head Chef
Originating from Kent, it was here where lucy
completed her NVQ Levels 2, 3 and 4 for catering and hospitality, food
preparation and cooking, together with her D32. Lucy's career started at
the well known Mirabelle Restaurant in Eastbourne in 1997, and she swiftly
moved up the ranks to Sous Chef at Bailiffs Court, Sussex and Head Chef at
the 3AA rosette Bacchanalian Restaurant in Glos. It was at this point
that Lucy went to Austrailia for a year and worked at the renowned Quay Restaurant
in Sydney.
Lucy holds among her professional acheivements the
Gold Medal winner to represent Britain in the World Skill Olympics and Regional
Winner in the Gordon Ramsay Scholar. This together with her work
placements at Petrus, Champignon Sauvage and Restaurant gordon Ramsay has given
Lucy the perfect platform to be Head Chef at Buxted Park Hotel.
